Buckeye Kitchen Mister Fire Suppression

The Buckeye Kitchen Mister fire suppression system provides 365/24/7 protection against fires in commercial kitchens and protects at three different levels to prevent fires from spreading into accumulated grease deposits inside the ventilation system;

  • Air ducts – a spray nozzle is installed at each air duct opening
  • Filter bank – one or more spray nozzles are installed behind the filters in exhaust hoods
  • Cooking appliances – each cooking appliance using oil/grease/butter is protected with a designated spray nozzle.

The main fire hazard in any commercial kitchen is a deep fat fryer along with a cooking range. Independent surveys have proven that these type of cooking appliances represent the larges fire hazards in terms of fire risk and damages.

Working principle

The Buckeye Kitchen Mister fire suppression system is a pre-engineered wet chemical fire suppression system designed specifically for commercial cooking equipment. It is intended to automatically detect and suppress fires involving cooking oils, grease, and appliances under kitchen exhaust hoods.

The system uses a fusible link detection cable routed through the kitchen hood and exhaust plenum.

  • Fusible links are rated for a specific temperature (typically 182°C or similar).
  • When a fire causes the temperature to exceed the link’s rating, the link melts.
  • Melting releases tension in the detection cable.

When cable tension is released:

  • A spring-loaded or nitrogen-cartridge-operated releasing mechanism is activated.
  • The mechanism opens the wet chemical storage cylinder.
  • Simultaneously, electrical and/or gas shutoff microswitches operate to:
    • Shut off gas valves.
    • Disconnect electric cooking appliances.
    • Activate alarms or building fire systems if required.

The Buckeye Kitchen Mister uses a non hazardous potassium-based wet chemical agent

It suppresses the fire through three mechanisms:

  • Cooling
    • The water content absorbs heat rapidly.
  • Smothering
    • Fine droplets create steam that helps reduce oxygen around the flame.
  • Saponification
    • Potassium compounds react with hot cooking oils to form a soap-like foam.
    • This blanket seals the oil surface and helps prevent re-ignition.

This prevents fire from spreading into accumulated grease deposits inside the ventilation system.
